Dessert wines are sweet wines typically served with dessert.Despite the name, they are often best appreciated alone, as an aperitif, or with fruit or patisserie. White sweet wines are best served chilled. Sweet wine may be made from naturally sweet grapes (vins doux naturels) or from botyrised grapes, where naturally occurring yeasts concentrate the sugar in the grapes, prior to harvest. Rarer sweet wines include ice wine and vin de paille or straw wine, known as such because the wine is made from grapes naturally desiccated on straw mats.
